Eight Austin Community College culinary arts students found themselves spending their summer break tucked inside a bright and bustling kitchen nestled in a castle atop the rolling hills of Yssingeaux, France.<\/p>\n

\"ACC-Pastry-Arts-Grand-Buffet-2015-0366\"\u201cThis was a summer they won\u2019t forget,\u201d says Chef Stephanie Herrington, ACC Culinary Arts Department chair. \u201cAll the things they learned overseas they\u2019re going to apply here, wherever they decide to work after graduating,\u201d<\/p>\n

The students were selected to study abroad at Ecole Nationale Sup\u00e9rierure de P\u00e2tisserie<\/a>, France\u2019s leading school in pastry and baking arts.<\/p>\n

\u201cIt was amazing to be able to study French pastries in France itself; be totally thrown into the French culture, the French cuisine, the French flavor, and the French people. It\u2019s a once-in-a-lifetime opportunity,\u201d recalls Stephanie Calk, ACC culinary arts student.<\/p>\n

For three weeks, Calk and her fellow ACC classmates immersed themselves into the intensive hands-on program. They worked with world-renowned pastry chefs to develop unique dishes and learn the technical skills of French pastries.<\/p>\n

\"ACC-Pastry-Arts-Grand-Buffet-2015-0395\"\u201cIt just opened up my eyes immensely. It will have a huge impact on where we take our careers,\u201d says Steve Singleton, ACC culinary arts student.<\/p>\n

The opportunity, provided through ACC\u2019s International Programs<\/a>, is the Culinary Art Department\u2019s second study-abroad trip.<\/p>\n

\u201cI\u2019ve seen a total change in them since we\u2019ve been back. They\u2019ve stepped it up,\u201d says Chef Herrington.<\/p>\n

\u201cI learned you can do whatever you set your mind to. It really made me realize that,\u201d says Hannah Fiveash, ACC culinary arts student. \u201cWhatever you want to do you make that happen.\u201d<\/p>\n
